Chicken Salad- YUM!

I have a great Chicken Salad Recipe that I have made for years and I want to share with YOU! I was gifted with this recipe from a neighbor.  She has long since moved and I am not even sure where she lives now, but I am still making her chicken salad recipe. Every time I make it for dinner or a luncheon, it gets rave reviews.  In fact, I used to make it for my daughter when she was in college and would send it back with her so she would have something to eat besides cereal and soup. To this day, her college roommate comments about my chicken salad whenever I see her!  This recipe is so easy and can be made ahead of time. Try it out and let me know what you think!

Jan’s Chicken Salad
  • 2 to 3 cups cooked chicken, chopped
  • I chop my in my food processor
  • 1 cup of celery, chopped
  • ½ cup of toasted almonds (optional)
  • To toast almonds bake at 400 until lightly browned
  • Salt to taste
  • 2 tsp. grated onion
  • ¾ cup of mayonnaise (You can add more if you like)
  • Use real mayo.
  • Grated cheese, any kind (optional)
  • Mix all ingredients. Toss lightly and sprinkle grated cheese on top, if desired. Serve on croissants or kaiser rolls.

Home Decor and Pinterest...Sounds Like the Perfect Way to Spend An Afternoon...

So...what's this Pinterest, I teased in this week's newsletter?  Well, it is nothing short of greatness!  It is a social site, kind of like Facebook....think of it as a virtual bulletin board where you can pin your favorite images, links, recipes, ideas, and projects.  You can have as many boards as you want, organize them any way you want, share them with friends AND browse other people's boards, too.  You can use Pinterest for a lookbook to plan a party, decorate a room, keep track of a decorator's TO DO list, create a wish list ....the lifestyle possibilities are literally endless.  Surf on over and see for yourself.  Be warned, though, time does not stand still while you get lost in Pinterest and its millions of beautiful ideas.

Are You Ready?

Well, fellow North Texans...spring brings two types of weather:  Extreme and Lovely.  Personally, we prefer the latter.  Anyway, to help you prepare for the extreme and enjoy the lovely, we want to share two of our favorite Facebook resources. 

For the extreme, nail-biting storms we seem to be so prone to, check out Prepared in Plano  This Facebook page keeps you up to date with all severe weather alerts and local city and emergency information for the City of Plano.  It comes in SERIOUSLY handy during those nasty, unpredictable spring storms that knock out your dish, satellite, cable, etc., rendering your TV useless, (just when you need it the most).  We have spent many a storm, sirens wailing, huddled in the hall bathroom, glued to this page on our iPad.  Prepared in Plano posts weather alerts, watches, and warnings in real-time status updates.  In addition, they also post information regarding water restrictions, ERCOT notifications and local safety information. 

NOW…for the lovely weather!  North Texas spring days are truly a treasure.  You know, those days, that you are so thankful to live here and enjoy the beautiful sunshine and delicious temperatures, (this is of course before the searing heat makes its way to our area to make even the simplest tasks impossible and you remember it is your goal in life to plot and scheme to live ANYWHERE but here).  On those lovely spring days, I want…. no I need to be outside.  If you feel the same way, then make your plans for leisure using Playground Perspectives.  This Facebook page gives you the low-down on local parks and trails.  The resourceful ladies behind this page also have a great blog site, too.  On the blog, you can find parks and trails categorized by zip code, along with helpful information about park features.  Using this resource has allowed me to rediscover some of the hidden gems my city and the surrounding areas have to offer.

Are You Looking For a Way to Donate Your Large Furniture?

Have you been lucky enough to buy new furniture...a bedroom suit, dining room table, or a great new sofa?  If so, what did you do with your "old stuff?"  Recently, we were faced with this same question.  It can be a real problem if you want to donate good-condition furniture without owning your own truck.  In researching possible solutions, we discovered a few charities that not only accept large furniture items, but also pick up your items, too. 

What an can responsibility pass along your used furniture and help others in need along the way.  Check out our list of great charities:

Plano Community Charities-  A representative will pick up your donation furniture or anything else that is gently used, but still has life.  If it is a bed and someone walks into their store and is in immediate need, Plano Community Charities will make sure that individual's need is met right then and there. Most items are initially put into their store where people come to shop for items at a fair price.  The profits from PCC's store is then used to help people in our community who are unable to pay their electric, water or gas bills.  Plano Community Charity is located at 2436 Avenue K in East Plano.  To schedule a pick up, call 972-578-0399, or visit Plano Community Charity Finder.
